Years of Experience

Charlie Mac’s Executive Chef Patrick Dunn is a 2003 graduate of The Culinary Institute of America in New York. He learned how to sizzle and smoke barbeque from smokemaster Beau Hammond at Henry’s Smokehouse in South Carolina. Dunn’s years of experience combined with consultation from barbeque extraordinaire Hammond, who has racked up numerous awards for his legendary barbeque, create the best tasting smoke in the Southernmost City.

Massive Hickory Smoker

Our massive Ole Hickory smoker weighs almost 1 ton and is truly a sight to behold. It can hold more than 60 baby backs, 20 whole turkeys or 5 60-pound pigs at one time. Using hickory logs and innovative rotisserie technology, our meat is smoked and self-basted as it rotates. The smoker’s top-of-the-line convection system regulates the amount of smoke and heat for enhanced flavor. This “low and slow” cooking process creates Charlie Mac’s famous smoky and succulent BBQ.

Want to give your BBQ a kick? Try one of our smokin’ sauces, developed by Executive Chef Patrick Dunn especially for Charlie Mac’s.
